What to get ready

  • Photograph of Chia seeds Chia seeds 3.5 oz
  • Photograph of Lime Lime 12
  • Photograph of Sugar Sugar 9.9 oz
  • Photograph of Mint leaves Mint leaves 2.1 oz
  • Photograph of Salt Salt 0.1 oz
  • Photograph of Palm sugar Palm sugar 2.8 oz

Method

  1. 1 Soak chia seeds in cold water for 30 minutes until they swell and form a translucent, slimy layer.
  2. 2 Soak them separately in cold water, not in lemon juice, as the acid will cause the seeds to swell unevenly.
  3. 3 Dissolve white sugar and a little palm sugar in warm water until completely dissolved, then let it cool.
  4. 4 Squeezing lemon juice into cool sugar water, or into hot water, will give it a sour yet bitter taste.
  5. 5 Mix in the swollen chia seeds and refrigerate for 1 hour.
  6. 6 Stir again before pouring as the chia seeds settle at the bottom. Pour into a glass with ice and mint leaves.
