Almond cookies Chinese

Method

  1. 1 Beat the pork fat with sugar for 8 minutes until the mixture is light and fluffy.
  2. 2 Using lard instead of butter is what gives Cantonese biscuits their characteristic crumbly texture.
  3. 3 Mix the flour, almond flour, and baking powder together and knead quickly for 3 minutes.
  4. 4 Shape the dough into a ball, flatten it, and place an almond in the center.
  5. 5 Brush with egg yolk and bake at 175 degrees for 18 minutes.
  6. 6 The surface of the bread should have natural cracks; a smooth, flat surface indicates the dough has been kneaded for too long.

With an appliance

  • Air fryer 40 min

Replace step 5: lightly spray oil on the almonds, run the oven at 190 degrees for 12 minutes and flip after 6 minutes; cracks appear sooner, stack one layer at a time.
