  • Photograph of Chicken broth Chicken broth 3 ⅓ cups
  • Photograph of Sichuan peppercorns Sichuan peppercorns 0.4 oz

Method

  1. 1 Soak the vermicelli in warm water for 12 minutes, then drain. Do not soak in hot water as it will become mushy.
  2. 2 Sauté the minced pork over high heat for 5 minutes until the meat is tender and the pieces are slightly browned.
  3. 3 Sauté the fermented soybean paste with ginger and garlic in the pork fat for 90 seconds until the oil turns red.
  4. 4 Pour in the chicken broth and soy sauce, then add the vermicelli noodles and stir until the noodles have absorbed all the liquid, for 4 minutes.
  5. 5 The vermicelli must absorb all the water, leaving no standing water at the bottom of the pan; that's when the meat pieces will cling to the vermicelli strands like ants crawling on a branch.
  6. 6 Sprinkle with chopped scallions and crushed roasted Sichuan peppercorns, then serve immediately.
