Method

  1. 1 Soak wheat grains, white beans, and chickpeas separately for 12 hours.
  2. 2 Simmer each ingredient separately until it reaches its desired tenderness before combining them into one pot.
  3. 3 Simmering separately is mandatory because the three types of grains become tender at three different times.
  4. 4 Simmer for 30 minutes with sugar, cinnamon sticks, and orange peel until the sauce thickens.
  5. 5 Add sliced dates and raisins in the last 10 minutes to prevent the fruit from becoming mushy.
  6. 6 Scoop into a bowl, let it cool completely, and sprinkle with crushed walnuts and fresh pomegranate seeds.

With an appliance

  • Pressure cooker 2 hr 20 min

Replace steps 2–3: continue cooking separately but use high pressure for wheat for 20 minutes, chickpeas for 15 minutes, and white beans for 8 minutes, allowing each batch to release pressure naturally for 10 minutes; compared to simmering on the stove for about 2–3 hours, all three types soften in almost an hour without any of them becoming mushy first. Only combine after opening the lid and then cook with sugar and dried fruit as in steps 4–6.
