Method

  1. 1 Peel the cassava root, grate it thoroughly, and squeeze out the excess water, but retain the starch that settles at the bottom.
  2. 2 Return the settled starch to the grated cassava mass; this is the only binding agent for the spicy cake.
  3. 3 Mix the cassava with plenty of chopped chili peppers, green onions, salt, and pepper.
  4. 4 Peel the shrimp, chop them coarsely, and mix them into half of the flour mixture.
  5. 5 Shape the dough into elongated balls, then press a small shrimp into the center of each ball.
  6. 6 Fry in warm oil from 150 degrees to 175 degrees for 8 minutes until the inside is cooked through and the outside is crispy.

With an appliance

  • Air fryer 43 min

Replace step 6: spray oil around the cassava balls, fry in an air fryer at 155 degrees for 8 minutes, then increase to 180 degrees for another 6 minutes, flip at the 8th minute so that the cassava is cooked through but the outside is crispy.
