What to get ready

  • Photograph of Ripe bananas Ripe bananas 4.4 lb
  • Photograph of Sliced sandwich bread Sliced sandwich bread 20 slices
  • Photograph of Coconut milk Coconut milk 4 ¼ cups
  • Photograph of Sugar Sugar 11.3 oz
  • Photograph of Unsalted butter Unsalted butter 5.6 oz
  • Photograph of Vanilla Vanilla 1 ⅓ tbsp
  • Photograph of Black sesame Black sesame 2.1 oz
  • Photograph of Salt Salt 0.3 oz

Method

  1. 1 Slice ripe bananas into 5 mm thick slices, then mix with half the sugar and let sit for 2 hours.
  2. 2 Soak the bananas in sugar for 2 hours to allow them to release their juice and become intensely sweet; using them immediately will result in bland and crumbly cakes.
  3. 3 Tear the sliced bread into pieces and soak them in the remaining coconut milk and sugar mixture.
  4. 4 Mix the bananas with the soaked breadcrumbs and arrange them in layers in a buttered baking pan.
  5. 5 Bake at 180 degrees for 50 minutes until the caramel surface turns a dark brown color.
  6. 6 Sprinkle with black sesame seeds and let cool completely for 2 hours before cutting; cutting while hot will cause the cake to fall apart.
