Method

  1. 1 Melt the sugar over medium heat for 6 minutes until it turns amber, then spread it evenly over the bottom of the mold.
  2. 2 Blend the eggs, condensed milk, evaporated milk, cream cheese, and vanilla for 1 minute until smooth.
  3. 3 Strain the mixture through a sieve and gently pour it into the mold already containing the caramel.
  4. 4 Wrap the mold tightly with aluminum foil and steam it in a water bath for 50 minutes until the flan is firm but still slightly wobbly.
  5. 5 Let it cool, then refrigerate for 3 hours. Invert the mold onto a plate so the melted caramel coats the cake.

With an appliance

  • Oven 1 hr 40 min

    Replace step 4: place the covered mold in a tray of hot water and bake at 160°C on the middle rack for 40 minutes, rotating the tray at the 20th minute; step 5 remains unchanged.
