  • Photograph of Spring onion Spring onion 2.8 oz

Method

  1. 1 Pour boiling water into half of the flour, stir well, then add cold water and the remaining flour, and knead into a soft dough.
  2. 2 Cover the dough and let it rest for 30 minutes to make it easier to roll out.
  3. 3 Mix cooking oil with a little flour, salt, and pepper to form a thick oil-flour mixture.
  4. 4 Roll the dough into a thin sheet, brush with flour and oil, sprinkle with chopped scallions, then roll it into a string, twist it like a snail, and flatten it.
  5. 5 Roll the dough into a round patty about half a centimeter thick, then let it rest for 10 minutes.
  6. 6 Pan-fry with a little oil for 3 minutes on each side until golden brown and crispy, then slice and serve hot.

Replace step 6: brush both sides of the onion pancake with oil, fry at 200 degrees for 9 minutes, flip at the 5th minute; still roll out and let the dough rest for 10 minutes in step 5 to allow the pancake to separate into layers.
