What to get ready

  • Photograph of Flour Flour 1.1 lb
  • Photograph of Dry yeast Dry yeast 0.4 oz
  • Photograph of Salt Salt 0.3 oz
  • Photograph of Sugar Sugar 0.6 oz
  • Photograph of Roasted sesame seeds Roasted sesame seeds 1.1 oz
  • Photograph of Poppy seeds Poppy seeds 0.4 oz
  • Photograph of Oil Oil 2 ⅔ tbsp

Method

  1. 1 Mix the yeast with warm water and sugar, and wait 10 minutes for it to rise.
  2. 2 Knead the flour with salt and yeast for 12 minutes, then let it rise for 1 hour and 30 minutes until it doubles in size.
  3. 3 Cook a little flour with water to make a thin paste (romal), then let it cool.
  4. 4 Flatten the dough into a long sheet, press down vertical grooves with your fingers, then brush romal paste onto the surface.
  5. 5 Sprinkle with roasted sesame seeds and poppy seeds, bake at 250°C for 15 minutes until golden brown.

With an appliance

  • Air fryer 43 min

Replace step 5: spray barbari oil on the surface, run the steamer at 235 degrees for 9 minutes and rotate the bread after 5 minutes; the crust browns faster (6 minutes), and the dough must be divided into short loaves that fit in the basket.
