What to get ready

  • Photograph of Sticky rice Sticky rice 14.1 oz
  • Photograph of Roasted soybean powder Roasted soybean powder 3.5 oz
  • Photograph of Sugar Sugar 2.1 oz
  • Photograph of Salt Salt 0.3 oz
  • Photograph of Sesame oil Sesame oil 2 ½ tsp

Method

  1. 1 Wash the glutinous rice and soak it in water for at least 4 hours, then drain it for 30 minutes.
  2. 2 Steam the glutinous rice in a cloth-lined steamer for 30 minutes, sprinkling it with a little diluted salt water and stirring occasionally.
  3. 3 Put the hot sticky rice into a mortar and pound it continuously for 10 minutes until the dough becomes thick and sticky and there are no more grains.
  4. 4 Mix roasted soybean flour with sugar and a pinch of salt.
  5. 5 Spread the dough into a 2 cm thick layer on a floured surface, let it cool for 15 minutes, then cut it into squares and roll them in flour.

With an appliance

  • Pressure cooker 48 min

Replace step 2: steam the glutinous rice under low pressure for 12 minutes, then release the pressure naturally for 5 minutes; the steps of pounding, coating with flour, and cutting the cake from steps 3–5 remain unchanged.
