What to get ready

• Ricotta cheese 480 g
• Chicken eggs 4
• Sugar 140 g
• Lime 2
• Rum 20 ml

Method

1. 1 Grate the broccoli (or ricotta, if available) with a fork until very smooth.
2. 2 Beat the eggs with the sugar for 5 minutes until the mixture is light and fluffy.
3. 3 Mix the cheese with the eggs, sugar, grated lemon zest, and a little wine, stirring gently until well combined.
4. 4 Pour the mixture into a shallow mold lined with parchment paper, and spread evenly.
5. 5 Bake at 180°C for 35 minutes, or until the top of the cake is golden brown and the inside is just firm.
6. 6 Let it cool, then refrigerate, cut into squares, and serve chilled.

With an appliance

• Air fryer 49 min

  Change to step 5: spray oil into small molds, run the hot air boiler at 195 degrees for 23 minutes and rotate the mold after 12 minutes; the filling solidifies 12 minutes earlier, large molds need to be divided into portions.
