Method

  1. 1 Boil the potatoes for 20 minutes, peel them, and then slice them thickly.
  2. 2 Sauté thinly sliced onions with unsalted butter for 6 minutes until translucent.
  3. 3 Add the potatoes to the pan, mash them briefly, and stir-fry for 5 minutes, seasoning with salt and pepper.
  4. 4 Sprinkle grated Montasio cheese over the top, spread evenly, and fry over low heat for 10 minutes until the bottom is golden brown and crispy.
  5. 5 Flip and fry for another 8 minutes, then cut into pieces and serve hot.

    Replace steps 4 and 5: spread the potato and cheese mixture into the greased baking pan, bake on the center rack at 200 degrees for 18 minutes, rotating the pan at the 9th minute; turn on the bottom heat for the last 3 minutes to brown and crisp the bottom.
