What to get ready

  • Photograph of Semolina flour Semolina flour 280 g
  • Photograph of Flour Flour 80 g
  • Photograph of Unsalted butter Unsalted butter 160 g
  • Photograph of Dried dates Dried dates 240 g
  • Photograph of Orange blossom water Orange blossom water 20 ml
  • Photograph of Sugar Sugar 60 g

Method

  1. 1 Mix the semolina flour with the all-purpose flour and melted unsalted butter, knead until fluffy, then let it rest for 1 hour to allow the flour to absorb the butter.
  2. 2 Remove the pits from the dates, grind them into a smooth paste, and then roll them into small balls.
  3. 3 Knead the flour with orange blossom water and a little warm water until it forms a soft, smooth dough.
  4. 4 Shape the dough into balls, press a dent in the center, place the date filling inside, wrap it tightly, and press it into a patterned mold.
  5. 5 Bake at 170°C for 20 minutes, until the cake is just slightly golden brown.
  6. 6 Let it cool completely, then sprinkle sugar over the surface of the cake.

With an appliance

  • Air fryer 39 min

Replace step 5: spray the tray with oil, run the hot air oven at 185 degrees for 14 minutes and rotate the tray after 7 minutes; the cakes will brown 6 minutes sooner, so you must divide them into batches to prevent the patterns from being compressed.
