Palmier

30 min Hands-on time + 30 min soaking or marinating first
EasyDifficulty
6 stepsSteps

Method

  1. 1 Sprinkle half of the sugar and a pinch of salt on the table, then roll out the puff pastry dough on top.
  2. 2 Sprinkle the remaining sugar on top and gently roll the dough to coat it firmly with the sugar.
  3. 3 Roll the two long edges of the dough sheet inwards to meet in the middle, creating a double shape.
  4. 4 Wrap the dough tightly and freeze it for 30 minutes to allow it to harden, making it easier to cut.
  5. 5 Cut into 1 cm thick slices and arrange them spaced apart on a baking tray lined with parchment paper.
  6. 6 Bake at 200°C for 12 minutes, flip, and bake for another 6 minutes to caramelize both sides.

With an appliance

  • Air fryer 24 min

Replace step 6: spray the tray with oil, run the hot air fryer at 215 degrees for 10 minutes, flip the palmier at the 6th minute; the caramel will color faster (8 minutes), the fryer is small so it must be divided into multiple batches.
