Method

  1. 1 Mix rice flour with water to form a thin paste, then let it rest for 20 minutes.
  2. 2 Spread the rice paper sheets very thinly on a steam-strewn cloth mold, then remove and stack them in a greased pile.
  3. 3 Wash the chicken gizzards thoroughly with salt, boil them until cooked, then cut them into bite-sized pieces.
  4. 4 Sauté chicken gizzards and shredded chicken with onions, season with fish sauce and pepper.
  5. 5 Arrange the rice noodles on a plate, place the stir-fried chicken gizzards on top, and sprinkle with coriander and fried onions.
