What to get ready

  • Photograph of Flour Flour 1.8 lb
  • Photograph of Unsalted butter Unsalted butter 14.1 oz
  • Photograph of Sugar Sugar 11.3 oz
  • Photograph of Roasted sesame seeds Roasted sesame seeds 9.9 oz
  • Photograph of Pistachios Pistachios 8.5 oz
  • Photograph of Honey Honey ⅔ cup
  • Photograph of Fresh milk Fresh milk ⅔ cup
  • Photograph of Baking powder Baking powder 0.6 oz

Method

  1. 1 Beat the softened butter with the sugar for 6 minutes, then mix in the flour, baking powder, and milk to form a smooth dough.
  2. 2 Refrigerate the dough for 1 hour, then divide it into small 20g portions.
  3. 3 Mix roasted sesame seeds with honey to form a sticky paste, then spread it out on a tray.
  4. 4 Press one side of the dough ball into sesame honey and the other side into coarsely ground pistachios.
  5. 5 The two sides, each with a different type of grain, are the distinguishing feature of a barazek; mixing them completely erases the distinction.
  6. 6 Arrange the cookies with the sesame side facing up, bake at 175 degrees for 15 minutes, and let cool completely.

With an appliance

  • Air fryer 55 min

Replace step 6: spray with Barbarak pistachio oil, use a 190-degree steamer for 10 minutes and flip after 5 minutes; sesame seeds crisp quickly, line with perforated paper and divide into batches.
