Method
- 1 Simply pick the clusters of white acacia flowers that are in bloom and do not wash them with water; just gently shake them to remove the dust.
- 2 Washing the flowers with water will make them wilt and lose their fragrance, so just shake them and check for any defects visually.
- 3 Mix the flour with the egg yolks, beer, and sugar to form a thin paste, then let it rest for 15 minutes.
- 4 Beat the egg whites until soft peaks form, then gently mix them into the paste to make it light and fluffy.
- 5 Take the flower stem, dip it into the paste, then immediately drop it into 170-degree oil.
- 6 Fry for 60 seconds until lightly golden, then squeeze with lemon juice and sprinkle with powdered sugar. Serve immediately while hot.
