Method

  1. 1 Melt 50g of sugar into caramel, then immediately pour it into the mold and spread it evenly on the bottom.
  2. 2 Heat the milk with the cocoa powder and the remaining sugar for 5 minutes, then let it cool slightly.
  3. 3 Beat the eggs and pour in warm milk little by little; pouring in hot milk all at once will cause the eggs to curdle into crumbs.
  4. 4 Mix crushed amaretti biscuits, coffee, and rum into the mixture.
  5. 5 Pour into the caramel mold and bake in a water bath at 160 degrees for 55 minutes.
  6. 6 Refrigerate for 4 hours, then invert onto a plate so the caramel drips down to form a sauce.

With an appliance

  • Air fryer 1 hr

    Replace step 5: spray oil around the small mold, place the mold in the water tray of a steam cooker at 175 degrees for 36 minutes and rotate after 18 minutes; the flan will set faster, do not flip and must be divided into small cups in batches.
