Method

  1. 1 Blanch the bones and ribs in boiling water for 3 minutes, then rinse thoroughly.
  2. 2 Simmer the bones with roasted shallots for 60 minutes to make a sweet broth.
  3. 3 Soak shiitake mushrooms and wood ear mushrooms for 20 minutes, chop them finely, and mix them into the minced pork.
  4. 4 Season the minced pork with pepper and fish sauce, then roll it into bite-sized meatballs.
  5. 5 Add the meatballs to the broth and simmer for 10 minutes until they float to the surface.
  6. 6 Place the rice noodles in a bowl, arrange the meatballs and ribs on top, pour in the broth, and sprinkle with chopped scallions and cilantro.

With an appliance

  • Pressure cooker 55 min

Replace step 2: cook bones and ribs under high pressure for 22 minutes, then let them air dry for 12 minutes; this reduces cooking time to approximately 25 minutes, resulting in tender ribs and a flavorful broth without the need to constantly monitor the pot. The meatballs in step 5 should still be cooked with the lid open for 8 minutes.
