Method

  1. 1 Soak the snails in rice water and chili peppers for 60 minutes to remove all the mud and dirt.
  2. 2 Boil the snails for 5 minutes, remove the meat, and reserve the broth to allow it to settle.
  3. 3 Sauté the dried shallots, then stir-fry the sliced tomatoes for 5 minutes until they turn a beautiful red color.
  4. 4 Pour the snail broth and fermented rice vinegar into a pot, season with shrimp paste and fish sauce, then simmer for 10 minutes.
  5. 5 Quickly stir-fry the snail meat with a little onion and chili to maintain its crispness.
  6. 6 Place the rice noodles in a bowl, arrange the snails and fried tofu on top, pour in the sour broth, and add fresh herbs.

With an appliance

  • Air fryer 45 min

Replace the fried tofu used in step 6: lightly spray with oil and cook at 190 degrees for 10 minutes, flipping after 6 minutes; the total time remains almost the same, but the tofu is drier, crispy around the edges, and you don't have to stand to avoid the oil splattering.
