What to get ready

  • Photograph of Flour Flour 14.1 oz
  • Photograph of Chicken eggs Chicken eggs 4
  • Photograph of Baking powder Baking powder 0.4 oz
  • Photograph of Oil Oil 1 ½ cups
  • Photograph of Palm sugar Palm sugar 5.6 oz
  • Photograph of Cinnamon powder Cinnamon powder 0.3 oz
  • Photograph of Cinnamon Cinnamon 4 bars
  • Photograph of Salt Salt 0.3 oz

Method

  1. 1 Knead the flour with the egg, baking powder, salt, and 30 ml of warm water for 8 minutes, then cover and let it rest for 30 minutes.
  2. 2 Divide the dough into 4 portions and roll them out thinly until translucent when placed in your hand. Thicker dough results in chewy cookies, not crispy ones.
  3. 3 Fry in oil at 180 degrees, use chopsticks to press down on the center of the pastry for 5 seconds, then release to allow it to puff up into a concave disc shape.
  4. 4 Remove from the pan when lightly golden brown after about 40 seconds on each side, then drain on a rack.
  5. 5 Simmer palm sugar with cinnamon and 80 ml of water for 10 minutes to make a syrup, then drizzle it over the cake along with cinnamon powder.

With an appliance

  • Air fryer 44 min

Replace steps 3 and 4: lightly spray oil on both sides of the batter plate, fry in an air fryer at 200 degrees for 6 minutes, flip at the 3rd minute and press in the middle when removed to create a concave shape; step 5 remains unchanged.
