Method

  1. 1 Peel the shrimp, leaving the tails intact, then make three incisions along the belly and straighten the shrimp.
  2. 2 Toss with salt and pepper, pat dry, and roll in flour.
  3. 3 Dip the batter in egg, then coat with breadcrumbs and press firmly to create a thick coating.
  4. 4 Fry in oil at 180 degrees for exactly 2 minutes; shrimp cooks very quickly, so overcooking will cause the meat to shrink.
  5. 5 Mix mayonnaise with chopped chipotle peppers and lime juice to make a spicy dipping sauce.
  6. 6 Serve with shredded cabbage and corn tortillas to wrap into fried shrimp tacos.

With an appliance

  • Air fryer 30 min

    Replace step 4: spray evenly with oil, then bake in a hot air oven at 200 degrees for 8 minutes; the dry batter will be crispier.
