Method

  1. 1 Blanch the pork ribs in boiling water for 5 minutes to remove any foam, then rinse them.
  2. 2 Simmer the pork ribs with sliced ginger and dried shrimp in 500 ml of water for 50 minutes.
  3. 3 Peel the winter melon, remove the seeds, and cut it into 2 cm thick square pieces.
  4. 4 Add the winter melon to the pot and cook for another 20 minutes until it becomes translucent and soft.
  5. 5 Season with salt and pepper, sprinkle with chopped scallions and cilantro, then ladle into a bowl.

With an appliance

  • Pressure cooker 50 min

Replace step 2: cook the ribs under high pressure for 18 minutes, then let them air dry for 12 minutes; reduce the cooking time to about 20 minutes. This will ensure the ribs are evenly tender and require no constant monitoring. In step 4, continue cooking the winter melon with the lid open for 10 minutes to prevent it from dissolving.
