Method

  1. 1 Wash the rice and then pound or grind the grains to make the porridge smoother more quickly.
  2. 2 Cook the rice with chicken broth over low heat for 40 minutes, stirring constantly to prevent burning.
  3. 3 Marinate the minced pork with soy sauce, pepper, and a little chopped ginger for 10 minutes.
  4. 4 Shape the meat into small balls, add them to the porridge, and cook for 5 minutes.
  5. 5 Crack an egg into a bowl, then spoon hot porridge over it until the egg is cooked through.
  6. 6 Sprinkle with shredded ginger, scallions, cilantro, and fried onions, then serve hot.

With an appliance

  • Pressure cooker 38 min

Replace step 2: cook broken rice with broth under high pressure for 10 minutes, then let it rest naturally for 10 minutes; this reduces the cooking time by about 20 minutes, resulting in a smoother porridge that doesn't need stirring to prevent burning. The meatballs in step 4 should still be cooked with the lid open.
