Chausson aux pommes

50 min Hands-on time + 30 min soaking or marinating first
MediumDifficulty
5 stepsSteps

Method

  1. 1 Cook diced apples with butter, sugar, cinnamon, vanilla, and lemon juice for 12 minutes to make a thick jam.
  2. 2 Let the jam cool completely for 30 minutes; hot jam will melt the butter in the puff pastry.
  3. 3 Cut the dough into oval shapes, place jam on half of each side, then fold it over and press the edges together with a fork.
  4. 4 Brush with egg wash, then make curved cuts on the surface, 1 mm deep, without cutting through the dough.
  5. 5 Bake at 200 degrees Celsius for 25 minutes, or until the cake has tripled in size and has a glossy brown surface.

With an appliance

  • Air fryer 40 min

Replace step 5: run 180 degrees for 16 minutes. The dough will rise higher due to strong convection, but you must space them 3 cm apart because the bread will expand widely.
