  • Photograph of Pork chops Pork chops 2.2 lb
  • Photograph of Pork Pork 1.3 lb
  • Photograph of Chicken eggs Chicken eggs 12
  • Photograph of Wood ear mushrooms Wood ear mushrooms 3.5 oz

  • Photograph of Fish sauce Fish sauce ⅔ cup
  • Photograph of Sugar Sugar 3.5 oz
  • Photograph of Spring onion Spring onion 3.5 oz
  • Photograph of Cucumber Cucumber 14.1 oz

Method

  1. 1 Mix the minced meat with wood ear mushrooms, soaked and cut dried rice noodles, two eggs, and fish sauce.
  2. 2 Pour the mixture into a mold and steam for 25 minutes until the meatloaf firms up.
  3. 3 Brush the remaining egg yolk over the surface of the patties and steam for another 4 minutes until golden brown and glossy.
  4. 4 Brush the egg yolk on top at the end, don't mix it in; mixing it in will ruin the characteristic yellow color of the patty.
  5. 5 Marinate the thinly sliced pork chops for 4 hours, then bake at 230 degrees for 16 minutes.
  6. 6 Cook broken rice with less water than regular rice, then serve it with pork ribs, pork patties, fried shallots, and cucumber.

With an appliance

  • Microwave 1 hr 20 min

Replace steps 2–3: rotate the meatball mold at 600 W for 12 minutes, brush with egg yolk, then rotate for another 2 minutes until the surface is golden brown; keep the ribs and rice from steps 5–6 unchanged.
