Method

  1. 1 Wash the broken rice and cook it like regular rice. Once cooked, let it sit for another 10 minutes to make the rice grains fluffy.
  2. 2 Tenderize the pork chops by gently pounding them, then marinate them with minced garlic, shallots, fish sauce, sugar, pepper, and a little cooking oil for 30 minutes.
  3. 3 Grill the ribs over charcoal or in a hot pan, 6 minutes per side, brushing with the marinade for a glossy, golden-brown finish.
  4. 4 To make scallion oil: heat the oil, then pour it into a bowl of finely chopped scallions and stir well.
  5. 5 To make sweet and sour fish sauce, mix fish sauce, sugar, water, and chopped garlic and chili peppers, stirring until dissolved.
  6. 6 Fry an egg sunny-side up, scoop rice onto a plate, place the ribs on top, drizzle with scallion oil, arrange sliced cucumber and tomatoes, and serve with a bowl of fish sauce.

With an appliance

  • Oven 54 min

Replace step 3: place ribs on the middle rack, bake at 220 degrees for 14 minutes, then rotate the rack for 7 minutes, brush with sauce in the last 3 minutes; no need to watch each side, but it lacks the smoky flavor.
