What to get ready

  • Photograph of Spring onion Spring onion 11.3 oz
  • Photograph of Oil Oil 2 cups
  • Photograph of Salt Salt 0.8 oz
  • Photograph of Roasted sesame seeds Roasted sesame seeds 2.8 oz

Method

  1. 1 Knead the dough with cold water for 12 minutes, then let it rest for 40 minutes.
  2. 2 Roll the dough very thinly, then brush with oil, sprinkle with salt and green onions, and roll and twist into a spiral shape.
  3. 3 Roll it out into a thin disc only 4 mm thick, thinner than the thicker pan-fried version, so the whole pancake is crispy instead of soft in the middle.
  4. 4 Sprinkle roasted sesame seeds on one side and press gently so the seeds stick.
  5. 5 Fry in a pan with plenty of oil for 3 minutes on each side, pressing down repeatedly with a spatula.
  6. 6 Flattening the pastry while frying ensures even crispiness; failing to flatten it results in a puffy center with remaining dough.

With an appliance

  • Air fryer 59 min

Replace steps 5 and 6: spray oil evenly on both sides of the thin pancake, fry in an air fryer at 195 degrees for 9 minutes, flip at the 5th minute and press flat with a wire rack to ensure even crispiness.
