What to get ready

  • Photograph of Almond flour Almond flour 1.6 lb
  • Photograph of Powdered sugar Powdered sugar 1.3 lb
  • Photograph of White chocolate White chocolate 1.1 lb
  • Photograph of Fresh cream Fresh cream 1 ⅓ cups
  • Photograph of Orange liqueur Orange liqueur ⅓ cup
  • Photograph of Matcha green tea powder Matcha green tea powder 0.8 oz
  • Photograph of Sugar Sugar 11.3 oz
  • Photograph of Unsalted butter Unsalted butter 4.2 oz

Method

  1. 1 Heat the sugar syrup to 118 degrees Celsius, then mix it with almond flour to form a marzipan mixture.
  2. 2 Dye the marzipan block with matcha powder until it turns light green, then refrigerate for 3 hours.
  3. 3 Melt the cream with white chocolate and orange liqueur to make ganache, then let it solidify.
  4. 4 Roll marzipan into a thin sheet 3 mm thick between two layers of parchment paper.
  5. 5 Roll the parchment paper between the sheets because marzipan is very sticky; rolling it directly will tear the sheet and leave it sticking to the table.
  6. 6 Cut out a square, place the ganache inside, and fold it into a square pillow shape with three sides.

With an appliance

  • Microwave 1 hr 54 min

Replace step 3: add the cream, white chocolate, and orange liqueur to the bowl, microwave at 500W in 30-second increments for a total of 3 minutes, stirring after each increment; a faster 3 minutes at lower heat will allow the ganache to melt smoothly, reduce chocolate burning, and eliminate the need to monitor the double boiler. The steps for rolling and folding the marzipan remain the same.
