What to get ready

  • Photograph of Flour Flour 800 g
  • Photograph of Pork fat Pork fat 320 g
  • Photograph of Palm sugar Palm sugar 360 g
  • Photograph of Baking powder Baking powder 16 g
  • Photograph of Salt Salt 12 g
  • Photograph of Cinnamon powder Cinnamon powder 12 g
  • Photograph of Fresh milk Fresh milk 240 ml
  • Photograph of Chicken eggs Chicken eggs 4

Method

  1. 1 Mix the lard with the flour, baking powder, and salt until crumbly, then add the milk and knead for 6 minutes.
  2. 2 Let the dough rest for 30 minutes, then divide it into equal portions.
  3. 3 Grind the palm sugar into coarse crumbs and mix it with cinnamon to make the filling.
  4. 4 Roll out two plates of dough to a thickness of 3 mm, spread the filling on one plate, and cover with the other plate.
  5. 5 Press the edges together with a fork, then poke a few holes in the middle; if you don't poke holes, the boiling sugar will cause the cake to puff up and burst.
  6. 6 Bake at 190 degrees for 20 minutes; the sugar will melt and form a thin layer of caramel in the cake.

With an appliance

  • Air fryer 52 min

Replace step 6: spray both sides with Coyota oil, use a 205-degree hot air fryer for 13 minutes and flip at minute 7; the crust will crisp up faster but you must space them out so that the hot sugar doesn't stick to the cakes.
