Method

  1. 1 Make béchamel sauce from butter, flour, and milk, stirring for 6 minutes until thickened, then season with nutmeg.
  2. 2 Spread béchamel sauce on two slices of bread, layer with ham and cheese, then place the remaining slice on top.
  3. 3 Spread more béchamel sauce on top and sprinkle with grated cheese.
  4. 4 Bake at 220 degrees for 12 minutes, or until the cheese surface is golden brown and puffed up.
  5. 5 Fry a runny fried egg and place it on top of the pie — that egg is the whole difference between Madame and Monsieur.

With an appliance

  • Air fryer 25 min

    Replace step 4: spray a thin layer of oil onto the sides of the mold, use a 235-degree hot air oven for 8 minutes, rotating the tray at minute 4. The strong airflow shortens the time by about one-third compared to a conventional oven and browns the surface faster.
