Method

  1. 1 Simmer red beans with sugar until a thick paste is formed, then roll into balls, which can be wrapped around a strawberry.
  2. 2 Mix glutinous rice flour with sugar and water until you have a smooth, liquid mixture.
  3. 3 Steam or microwave, stirring vigorously every minute, three times until the batter is translucent and sticky.
  4. 4 Sprinkle roasted tapioca starch on the table, then pour the hot mochi mixture onto it, roll it out thinly, and divide it into portions.
  5. 5 Wrap the mochi around the filling, seal the edges tightly, then flip it over so the filling is facing down.

With an appliance

  • Microwave 36 min

Replace step 3: rotate the mochi dough at 700 W for three cycles, each cycle lasting 1 minute, stirring vigorously after each cycle until the dough becomes translucent and pliable; steps 4–5 remain unchanged.
