Method

  1. 1 Peel the root of the Platycodon grandiflorus plant, then split it lengthwise and soak it in salt water for 30 minutes to remove the bitterness.
  2. 2 Each root strip is pounded with a wooden mallet to loosen the root fibers.
  3. 3 Crushing the roots is a mandatory step; keeping them whole makes them tough and prevents them from absorbing the sauce.
  4. 4 Mix gochujang with honey, sesame oil, garlic, and soy sauce to make a spread.
  5. 5 Grill the roots on the grill for 4 minutes, then brush with sauce and grill for another 6 minutes, flipping twice.
  6. 6 Sprinkle with roasted sesame seeds and chopped scallions before serving.

With an appliance

  • Charcoal grill 35 min

Set the grill to 220 degrees Celsius for 10 minutes; the gochujang sauce contains honey, so you must flip it every 2 minutes to prevent burning.
