What to get ready

  • Photograph of Dashi broth Dashi broth 4 ¼ cups
  • Photograph of Maitake mushrooms Maitake mushrooms 7.1 oz
  • Photograph of Prawns Prawns 7.1 oz
  • Photograph of Chicken breast Chicken breast 7.1 oz
  • Photograph of Cooking sake Cooking sake ¼ cup

  • Photograph of Salt Salt 0.3 oz

Method

  1. 1 Cook the dashi until clear, seasoning very lightly with salt and sake to preserve the mushroom flavor.
  2. 2 Tear the maitake mushrooms into small pieces, slice the chicken into thin slices, and peel the shrimp.
  3. 3 Arrange the mushrooms, chicken, and shrimp in an earthenware teapot, then pour dashi over them until the pot is two-thirds full.
  4. 4 Cover and steam for 20 minutes to allow the mushroom aroma to be sealed inside the jar.
  5. 5 Serve hot, pour the broth into small bowls, squeeze a few drops of lemon juice, and then eat the solids.

With an appliance

  • Microwave 35 min

Replace step 4: cover the teapot and microwave at 600 W for 10 minutes, then rest for 3 minutes to allow the chicken, shrimp, and mushrooms to cook through with residual heat; step 5 remains unchanged.
