Method

  1. 1 Soak soybeans for 8 hours, then blend with 1 liter of water and strain through a cloth to extract the milk.
  2. 2 Boil the soy milk for 15 minutes, skimming off the foam continuously. The soy milk must boil long enough to remove the raw soy flavor.
  3. 3 Arrange the black vinegar, soy sauce, crushed roasted anchovies, and chili oil at the bottom of the bowl.
  4. 4 Pour the boiling hot soy milk from a height into a bowl of vinegar; the vinegar will cause the soy milk to curdle into a soft film.
  5. 5 The milk must be boiling and poured from a height; if the milk cools, it won't curdle, and the dish will simply be milk mixed with vinegar.
  6. 6 Sprinkle with chopped scallions, toasted sesame seeds, and crispy bread cubes, then eat immediately with a spoon.

With an appliance

  • Microwave 45 min

Replace step 2: pour the soy milk into a deep bowl, microwave at 900W for 10 minutes, stopping twice to stir and skim off the foam; reduce to about 5 minutes, the milk will be evenly cooked without burning at the bottom, and you won't have to constantly skim it off. Step 4: still pour the boiling milk into the vinegar bowl immediately to create a soft film on top.
