What to get ready

  • Photograph of Almond flour Almond flour 8.5 oz
  • Photograph of Powdered sugar Powdered sugar 9.9 oz
  • Photograph of Chicken eggs Chicken eggs 8
  • Photograph of Unsalted butter Unsalted butter 9.9 oz
  • Photograph of Flour Flour 4.2 oz
  • Photograph of Sliced almonds Sliced almonds 1.4 oz
  • Photograph of Salt Salt 0.1 oz

Method

  1. 1 Melt the butter until it turns a chestnut brown and smells like roasted nuts, strain out any solids, and let it cool down to 40 degrees Celsius.
  2. 2 Brown butter is the essence of financier; if the butter is only melted and not browned, the cake will be bland.
  3. 3 Mix the almond flour, powdered sugar, all-purpose flour, and salt together, then add the unwhipped egg whites and stir gently.
  4. 4 Pour in the brown butter, mix well, and let the dough rest in the refrigerator for 1 hour.
  5. 5 Pour into a mold, sprinkle with sliced almonds, and bake at 200 degrees for 14 minutes until the edges are crispy and the center is moist.

With an appliance

  • Air fryer 35 min

Replace step 5: run at 180 degrees for 11 minutes. The crust crisps faster, so reduce the oven temperature by 20 degrees and check at the 9th minute.
