Method

  1. 1 Grate Montasio cheese, using a mix of young and aged cheese for a deeper flavor.
  2. 2 Boil the potatoes and slice them; sauté the onions in butter until softened and sweet.
  3. 3 Mix the potatoes, onions, and cheese together and spread evenly in a non-stick pan.
  4. 4 Fry over low heat for 10 minutes until the bottom forms a crispy golden crust.
  5. 5 Flip it over with a plate and fry the other side for another 8 minutes, then cut into pieces and serve hot.

With an appliance

  • Oven 35 min

    Replace steps 4 and 5: Spread the mixture from step 3 into a round baking pan lined with parchment paper, bake on the middle rack at 200 degrees for 18 minutes, then turn on the top heat for 2 minutes; no need to flip the cake, but let the cheese side be golden and crispy before slicing.
