Method
- 1 Slice the rib meat off the bone into long strips, leaving one end still attached to the bone.
- 2 Soak the ribs in cold water for 1 hour, changing the water three times to remove the blood and give the meat a lighter color.
- 3 Blend pears with garlic and onions, then mix in soy sauce, sugar, sesame oil, and soju to make a marinade.
- 4 Marinate for 8 hours in the refrigerator; the enzymes in pears tenderize the meat, so do not marinate for more than 12 hours or the meat will become tough.
- 5 Grill over high heat for 3 minutes on each side; the sauce is sweet, so you need to flip it frequently.
- 6 Cut into pieces with scissors right on the grill, then wrap in lettuce leaves with chopped scallions.
With an appliance
-
Charcoal grill 40 min

-
Air fryer 40 min
Steam over medium heat at 200 degrees Celsius for 12 minutes, flipping at minute 7; arrange in a thin layer so that the meat can sear on one side.
