Method

  1. 1 Boil potatoes with their skins on for 35 minutes, then peel and mash them immediately while they are still hot.
  2. 2 Mashing while hot is essential; if the potatoes cool, the mashed potatoes will become a sticky, glue-like mass.
  3. 3 Mix the potatoes with eggs, parmesan, butter, and milk until smooth and well-seasoned.
  4. 4 Spread half of the block into a buttered pan and sprinkle with breadcrumbs.
  5. 5 Layer the spicy salami and smoked provola in the middle, then cover with the remaining potatoes.
  6. 6 Sprinkle breadcrumbs and crumbled butter on top, then bake at 200 degrees for 40 minutes until golden brown and crispy.

With an appliance

  • Air fryer 1 hr

Preheat oven to 180 degrees Celsius for 30 minutes in a small baking pan; the top of the cake crisps up faster, so cover with foil for the first 15 minutes.
