Method
- 1 Heat goat's milk with sugar and a pinch of baking soda over low heat, stirring constantly for 50 minutes.
- 2 Baking soda prevents the milk from curdling and gives the candy a uniform golden brown color.
- 3 Stir continuously during the last 15 minutes; if you stop stirring, the bottom of the pot will burn and the whole pot will taste bitter.
- 4 Cook until the condensed milk separates from the sides of the pot and stretches into a string.
- 5 Mix in the coarsely ground walnuts and vanilla extract, then let cool for 2 hours until the mixture becomes firm.
- 6 Roll the dough into balls and then wrap each ball in parchment paper, twisting the ends.

Replace steps 1 and 3: Pour the goat's milk mixture with sugar and baking soda into a deep tray, place it on the middle rack of the oven at 140 degrees for 40 minutes, stirring at minutes 15 and 30; reduce the time to about 10 minutes for the milk to thicken. Even heat helps prevent the bottom from burning and reduces the need for constant stirring to twice a day. In step 4, still check that the mixture stretches into a string before removing it and mixing in the walnuts.
