What to get ready

  • Photograph of Flour Flour 1.1 lb
  • Photograph of Red bean Red bean 1.1 lb
  • Photograph of Walnut Walnut 9.9 oz
  • Photograph of Chicken eggs Chicken eggs 8
  • Photograph of Honey Honey ½ cup
  • Photograph of Fresh milk Fresh milk 2 cups
  • Photograph of Unsalted butter Unsalted butter 5.6 oz
  • Photograph of Sugar Sugar 8.5 oz
  • Photograph of Baking powder Baking powder 0.6 oz

Method

  1. 1 Soak red beans for 8 hours, then cook until tender for 45 minutes and simmer with sugar to form a thick filling.
  2. 2 Blanch the walnuts for 60 seconds, then peel off the brown skin; the shell will leave the walnuts with a bitter taste.
  3. 3 Mix the flour with the eggs, milk, honey, melted butter, and baking powder until smooth.
  4. 4 Heat a two-piece cast iron walnut-shaped pan, then grease both sides with butter.
  5. 5 Pour the sauce into the bottom half, place the red bean paste and a whole walnut in the middle, then pour more sauce over it.
  6. 6 A whole walnut in the center is the identifying feature of this cake; press into a mold and bake for 4 minutes on each side.

With an appliance

  • Oven 55 min

Replace step 6: spray oil on both halves of the walnut mold, place on the middle rack of the oven at 210 degrees for 9 minutes, and flip the entire mold after 5 minutes; the cake will cook evenly, requiring less monitoring of each side, but the pattern will be less crispy than with a cast iron mold.
