Horumonyaki

45 min Hands-on time + 1 hr soaking or marinating first
MediumDifficulty
5 stepsSteps

Method

  1. 1 Squeeze the intestines with flour and salt to remove the slime, then rinse thoroughly several times.
  2. 2 Blanch the pig's intestines in boiling water with sake and ginger, then remove and pat dry.
  3. 3 Marinate the pig's intestines with miso paste, soy sauce, minced garlic, sesame oil, and chili powder for 1 hour.
  4. 4 Grill over medium heat, turning frequently so the fat drips down without burning the intestines.
  5. 5 Grill until the outside is slightly charred while the inside remains juicy, sprinkle with chopped scallions, and serve immediately.

With an appliance

  • Oven 42 min

Replace steps 4-5: spread the bacon on the middle rack of the oven at 230 degrees for 14 minutes, rotate the tray for 7 minutes, and then rotate the top rack for 2 minutes; the fat will drain into the tray, resulting in even cooking but lacking the smoky flavor.
