What to get ready

• Sweet potato 800 g
• Salt 4 g

Method

1. 1 Wash the sweet potatoes thoroughly, leaving the skin on, and pat them dry.
2. 2 Sprinkle with a little salt, then wrap each potato tightly in aluminum foil.
3. 3 Bake in the oven at 160 degrees for 80 minutes to allow the starch to gradually convert into sugar.
4. 4 Test by piercing the potato; it's ready when it's soft and mushy with sap oozing from the tip.
5. 5 Peel off the foil, split the potato in half, and eat it while it's hot.

With an appliance

• Charcoal grill 1 hr 36 min

  Step 3: Place the paper-wrapped potatoes on a small charcoal grill 25 cm away from the coals for 60 minutes, turning them every 15 minutes; the skin will have a smoky smell and the flesh will still ooze sap, but the charcoal must be evenly distributed.
