What to get ready

  • Photograph of Potato Potato 3.5 lb
  • Photograph of Broken wheat (dalia) Broken wheat (dalia) 12.7 oz
  • Photograph of Onion Onion 2.4
  • Photograph of Walnut Walnut 9.9 oz
  • Photograph of Pomegranate molasses Pomegranate molasses ½ cup
  • Photograph of Red chilli powder Red chilli powder 1.4 oz
  • Photograph of Olive oil Olive oil 1 cups
  • Photograph of Pine nuts Pine nuts 3.5 oz
  • Photograph of Mint leaves Mint leaves 2.1 oz
  • Photograph of Salt Salt 0.8 oz

Method

  1. 1 Boil the potatoes for 25 minutes, then mash them while still hot and let them cool completely.
  2. 2 Soak the broken wheat for 30 minutes, then squeeze out the excess water and knead it with mashed potatoes to form a dough.
  3. 3 Squeezing out the excess wheat is the crucial step; the remaining water creates a soggy mass of husks that won't hold its shape in the tray.
  4. 4 Sauté onions with crushed walnuts, chili powder, pomegranate syrup, and pine nuts for 10 minutes to make the filling.
  5. 5 Place half of the shell in the tray, cover with filling, then place the other half and score a diamond shape on the surface.
  6. 6 Drizzle with olive oil, bake at 200 degrees for 30 minutes, and sprinkle with mint leaves when serving.

With an appliance

Replace step 6: steam in a hot air pot at 190 degrees for 20 minutes; the small tray should be divided into two sections and sprayed with oil between sections.
