  • Photograph of Beef Beef 1.1 lb
  • Photograph of Pig's blood Pig's blood 8.5 oz

Method

  1. 1 Simmer beef bones with cinnamon and star anise for 40 minutes to make a broth with a rich herbal aroma.
  2. 2 Beat the pig's blood with a little water, then strain it through a sieve until smooth.
  3. 3 Pour the blood into the simmering broth, stirring constantly to thicken the broth without lumps.
  4. 4 Season the broth with fish sauce and sugar to make it flavorful; this dish is served in small bowls, so the taste needs to be strong.
  5. 5 Blanch the rice noodles, bean sprouts, and water spinach, arrange the thinly sliced beef on top, and then pour in the hot broth.

With an appliance

  • Pressure cooker 40 min

Replace step 1: simmer beef bones with cinnamon and star anise under high pressure for 13 minutes, then release pressure naturally for 10 minutes, and then strain the broth. In step 3, only add the blood when the pot is open and simmering gently to prevent clumping.
