What to get ready

  • Photograph of Green beans Green beans 3.1 lb
  • Photograph of Tomato Tomato 12
  • Photograph of Onion Onion 2
  • Photograph of Garlic Garlic 24 cloves
  • Photograph of Olive oil Olive oil 1 ⅓ cups
  • Photograph of Thick tomato passata Thick tomato passata 4.9 oz

  • Photograph of Pita bread Pita bread 8
  • Photograph of Salt Salt 0.7 oz

Method

  1. 1 Remove the ends of the green beans and cut them into 4 cm pieces.
  2. 2 Sauté the onions and garlic in plenty of olive oil for 10 minutes until the onions are translucent.
  3. 3 Add the green beans and stir-fry for 5 minutes, then add the chopped tomatoes and tomato sauce.
  4. 4 Simmer over low heat for 30 minutes until the beans are completely tender; bi zeit intentionally simmers the beans until they are soft and mushy, not crispy.
  5. 5 No water is added; the entire sauce comes from the tomatoes and olive oil.
  6. 6 Let it cool completely, then squeeze in some lemon juice and serve at room temperature with pita bread.

With an appliance

  • Oven 55 min

Replace step 4: cover and simmer the green beans in the tomato sauce on the middle rack of the oven at 180 degrees for 25 minutes; do not add water as in step 5 and allow to cool completely before adding lemon juice.
