Method

  1. 1 Marinate the fish fillets with turmeric, baharat, and lemon for 1 hour.
  2. 2 Fry the fish fillets in ghee for 2 minutes on each side until the outside is seared, then remove and set aside.
  3. 3 Simmer fish bones and heads for 20 minutes to make broth, then strain.
  4. 4 The fish dish uses fish bone broth and the fish is fried separately; the fish is not cooked together with the rice from the beginning.
  5. 5 Sauté the onions with the tomatoes and lemon zest, then add the rice and stir for 3 minutes.
  6. 6 Pour in the fish broth and cook for 15 minutes, then arrange the fried fish on top and let it simmer for 8 minutes.

With an appliance

  • Air fryer 1 hr 10 min

Replace step 2: spray a thin layer of ghee onto the fish, bake at 200 degrees for 7 minutes, flipping at the 4th minute; the fish will be crispy with less oil, about 1 minute faster than pan-frying, but in a small pot, you'll have to divide it into batches. Keep the broth and rice from steps 3–6 cooked separately so the fish doesn't fall apart in the rice.
