What to get ready

  • Photograph of Semolina flour Semolina flour 1.1 lb
  • Photograph of Dried dates Dried dates 14.1 oz
  • Photograph of Unsalted butter Unsalted butter 7.1 oz
  • Photograph of Honey Honey 11.3 oz
  • Photograph of Cinnamon powder Cinnamon powder 0.4 oz
  • Photograph of Orange blossom water Orange blossom water 2 ⅛ tbsp
  • Photograph of Oil Oil 1 ⅔ cups
  • Photograph of Roasted sesame seeds Roasted sesame seeds 2.1 oz

Method

  1. 1 Mix the semolina with the melted butter using your fingertips for 8 minutes, then let it rest for 1 hour to allow the seeds to absorb the butter.
  2. 2 Remove the pits from the dates and then grind them with cinnamon and orange blossom water to form a pliable paste.
  3. 3 Shape the semolina into strips, place the filling along the center, then fold it closed and flatten.
  4. 4 Carve a diamond pattern on the surface with a fork, then cut diagonally into a rhombus shape — this pattern helps the honey to set on the cake.
  5. 5 Deep-fry at 160 degrees for 6 minutes, then immediately dip in warm honey for 5 minutes and sprinkle with sesame seeds.

With an appliance

  • Air fryer 1 hr 36 min

Replace step 5: evenly spray oil on the carved cakes, fry in an air fryer at 180 degrees for 12 minutes, flip at the 7th minute, then immediately dip in warm honey as in the original recipe.
