What to get ready

  • Photograph of Fresh milk Fresh milk 8 ½ cups
  • Photograph of Cornstarch Cornstarch 7.1 oz
  • Photograph of Sugar Sugar 12.7 oz
  • Photograph of Rose water Rose water ½ cup
  • Photograph of Fresh cream Fresh cream 1 ⅔ cups
  • Photograph of Pistachios Pistachios 4.9 oz
  • Photograph of Pekmez grape syrup Pekmez grape syrup ⅔ cup

Method

  1. 1 Mix the cornstarch with a little cold milk until it dissolves completely and there are no lumps.
  2. 2 Heat the remaining milk with sugar and cream, then pour in the cornstarch mixture.
  3. 3 Stir continuously for 8 minutes until the mixture thickens like cream, then turn off the heat.
  4. 4 Only add rose water after turning off the heat; the fragrance will evaporate if you continue boiling it.
  5. 5 Pour the cream into a glass and press the plastic wrap tightly against the surface to prevent a film from forming.
  6. 6 Refrigerate for 4 hours, then drizzle with grape syrup or pink syrup and sprinkle with crushed pistachios.

With an appliance

  • Microwave 27 min

Replace steps 2–3: heat the milk, cream, sugar, and cornstarch at 700 W for 5 minutes, stopping stirring every minute; reduce to about 3 minutes, ensuring the mixture is smooth, doesn't stick to the bottom, and stir only five short turns instead of continuously. Rose water should still be added only after stopping the heat in step 4 to preserve the fragrance.
