What to get ready

  • Photograph of Flour Flour 2.5 lb
  • Photograph of Dry yeast Dry yeast 0.7 oz
  • Photograph of Coarse salt Coarse salt 1.1 oz
  • Photograph of Oil Oil ½ cup
  • Photograph of Black sesame Black sesame 2.1 oz
  • Photograph of Honey Honey ½ cup
  • Photograph of Unsalted butter Unsalted butter 7.1 oz

Method

  1. 1 Knead the dough with yeast, salt, and warm water for 12 minutes, then let it rise for 2 hours.
  2. 2 Press the dough into a disc 2 cm thick, do not roll it thinly.
  3. 3 Bury the dough disc directly into the hot ash covered with charcoal; do not use a grate or tray.
  4. 4 Burying it in ashes is a nomadic custom, so the crust has a thin layer of burnt crust and an ashy smell.
  5. 5 Bake for 20 minutes, then remove and brush off the ash with a dry cloth.
  6. 6 Spread melted butter and honey on the bread, then sprinkle with black sesame seeds. Tear the bread apart by hand while it's still hot.

With an appliance

  • Oven 50 min

Bake on a hot stone at 250 degrees for 15 minutes; it lacks the ashy flavor but the inside of the bread is still fluffy.
